One of my favorite stories is the one about the hot dog vendor. Maybe it’s because I love hot dogs, or maybe it’s because it is such an insightful story.

Perhaps you have heard it before. There’s this guy who runs a hot dog stand in the city and he does pretty good with it. Good enough in fact that he can afford to send his son off to college. While his son is off to college the dad continues to grow his business, by the time his son graduates from college his dad has 10 hot dogs stands around the city and no less than 15 employees. His business is booming!

Well, his son is shocked by all this growth. He tells his dad that times are bad, he shouldn’t be growing like this in “down” times, and he certainly shouldn’t be adding employees. He needs to be careful…

Cumin-Spiced Chicken and Egg Salad

Just because the warm days have left us does not mean that we can’t enjoy summer staples.  This is an egg salad with a protein boost and spice kick.  I thank my mother for this recipe.  She would make this with potatoes and hard boiled eggs and put it in pita bread to make warm sandwiches for lunch.  I left out the carbs and added more protein with the chicken.  Also, this really is figure friendly because it has no mayo that normally lathers typical egg salads.  The cumin adds a comforting warmth and stuffed into a toasted pita pocket, this will be your next go to weeknight dinner this fall !

Ingredients:

1lb chicken thighs, cut into bite sized pieces

4 hard boiled eggs chopped

1 medium onion, diced

1 tbsp of whole cumin seeds

1 tbsp of olive oil

1tsp of chilli powder

salt and pepper to taste

Irish Car Bomb Cupcakes

A few weeks ago I made an offhand comment in…well, a comment about making these cupcakes as a way to spit in the eye of all my friends with dietary restrictions.  This recipe has animal products, refined sugar, alcohol, gluten…pretty much everything you need to cut people out of dessert time except for nut allergies.  The comment was born out of break-up aggravation and anger, and I figured channeling that through defiant cupcake baking was more productive than lashing out or boring my friends.  Also, it was my sister-in-law’s early birthday celebration the same weekend and she loves these, so win win!  In fact, I first made these when we went bridesmaids’ dress shopping for her wedding two years ago.  Cupcakes + prewedding diets = still totally delicious.

That sounded like s stupid simple thing that any blogger would get behind. However, for whatever reason this wishful reciprocity only happens sporadically at best…until now.
